Ahhh! Fall and all of its smells – cinnamon, pumpkin, leather shoes, apples. My very, very favorite time of year! Many people celebrate seasons in different ways. I celebrate seasons by baking pies (you can see my July 4th pie here). I don’t know where my love for baking pies came from, but I adore it so, so much. I think pies are the coziest comfort food and I love getting lost in the kitchen for a while, combining spices and ingredients.
I wanted to share with you THE EASIEST pie you’ll ever make. Get ready to be baffled…
1 15oz. can Farmer’s Market Pumpkin (I found mine at Fresh Market)
3/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1/2 tsp. sea salt
1 14oz. can sweetened condensed milk
2 eggs, slightly beaten
1 9″, deep dish pie shell

Most of the ingredients are spices and you can find the most delicious smelling spices at Fresh Market! Mix your can of pumpkin and all of the spices together. Add the remaining ingredients. Mix slowly until thoroughly mixed. Bake at 425 for 15 minutes, then reduce the temperature to 350 for an additional 35-40 minutes. Thoroughly cool pie before serving. Serves 6-8!
A few notes: I just started becoming obsessed with baking pies, so I don’t have all of the ideal supplies yet. I don’t even have a roller (I use a wine bottle!) so with that being said, my pie sides weren’t as thick and wide as I would have wanted. Because of this, my shapes folded over the side a little. Also, since you’re adding eggs, don’t add too much filling. It will rise a little and you still want to see your shapes!
